Basic:

Garlic 2 clove
Tomatoes 4 pc
Salt to taste
Ground black pepper to taste
Vegetable oil 3 tbsp
Mayonnaise 2 tbsp
Greenery 10 g

How to make fried eggplant slices with tomatoes and mayonnaise? Prepare your food. Choose eggplants and tomatoes of such a size that they fit in diameter. Even use a little more eggplant, as it will shrink during frying. You can make your own mayonnaise. You will find recipes for homemade mayonnaise after the last step.

Wash and dry the eggplant, cut off the ends. Cut the eggplant into rings about 1cm thick.

Place the eggplant rings in a bowl and sprinkle with salt. Take salt at the rate of 0.5 teaspoon per 1 medium eggplant. Stir the pieces until they are all coated in salt. Leave the eggplant for 15 minutes — during this time the salt will draw out the bitterness from it along with the juice. Please note that in some cases there is no need to remove bitterness from eggplants — usually young vegetables, as well as some special varieties, are not bitter.

While the eggplant is waiting in the wings, prepare the other components of the appetizer. Wash and dry the greens. Finely chop the leaves, it is better to remove thick stems.

Add greens to mayonnaise. Squeeze a peeled clove of garlic through a press there. Stir.

Cut the tomatoes into rings about 0.5 cm thick. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Rinse the eggplants to remove any excess juice and dry well with paper towels. Heat vegetable oil in a frying pan for frying. Fry the eggplant slices on both sides until lightly golden and soft. Place the fried eggplants on a plate and cool slightly. Lubricate the rings with prepared garlic mayonnaise. Place tomato slices on top. Lightly salt and pepper them on top.
