Peel the onion and rinse in cold water. Cut the peeled onion into half rings or a little smaller. There is no need to cut very finely.

Heat a frying pan until hot and pour a little vegetable oil on it. To give the liver a creamier taste, you can use butter instead of vegetable oil. Add the chopped onion and fry it for 1-2 minutes. The onion will begin to brown slightly.

While the onions are frying, prepare the chicken livers. Cut it into small pieces, cutting out the films along the way. Place the chopped liver in the frying pan with the onion, stir and fry everything together for a few minutes. so that the liver changes color. Then cover the pan with a lid and cook the liver over low heat for 10-12 minutes.

Then add sour cream and mustard to the pan. Add a little salt and spices to taste. As a spice, you can add a little ground pepper and dried aromatic herbs, for example, oregano, basil, thyme. You can add a little garlic for flavor. Mix everything and heat for a couple more minutes.
