How to make delicious lentils for a side dish? Prepare the necessary ingredients. Green lentils will be used. Wash all vegetables and herbs. Peel carrots, onions and garlic. Remove the seeds from the bell pepper.

Grate the carrots on a coarse grater, chop the peppers and onions into small pieces. If desired, carrots can also be cut into cubes.

In a frying pan with high edges or in a saucepan with a thick bottom, heat the vegetable oil and fry the chopped vegetables in it, stirring occasionally, for 2-3 minutes.

While the vegetables are roasting, cut the tomatoes into medium-sized cubes. If desired, you can first remove the skin from the tomatoes. To do this, make a cross cut on the tomatoes, pour boiling water over them for a minute, then drain the water. Now the skin can be easily removed. Finely chop the garlic or pass it through a press.

Add tomatoes, garlic, salt and a pinch of sugar to the pot or pan with vegetables. If you use seasonal vegetables, there is no need to add sugar; usually carrots and tomatoes provide enough sweetness. Mix everything and leave covered over low heat for another five minutes.

Rinse the lentils well. If you wish, you can soak it for a while. I didnʼt soak the lentils.

Turn the heat to maximum. Add lentils to vegetables and cover with water. After boiling, reduce the heat to low. Cover the pan with a lid and cook the lentils for about 40 minutes, stirring occasionally.

If the water boils away very quickly, and the cereal is not ready yet, then you should gradually add boiling water to the dish. If, after the specified time, there is still liquid left in the pan, then at the end of cooking, remove the lid, turn the heat to maximum and, stirring occasionally, cook until there is no liquid left in the pan. Sprinkle the finished dish with finely chopped herbs. You can add pepper if you wish. Bon appetit!
