Wheat flour 300 g
Vegetable oil 40 ml
Soda 0.5 tsp
Kefir 250 ml

How to knead dough for kefir pies without yeast like fluff? Prepare the necessary ingredients. The amount of sugar must be adjusted in advance depending on the future product (pizza, pie, donuts). If the product is sweet, then leave the amount of sugar the same, otherwise it is better to reduce the amount of sugar.

Pour the kefir into a suitable sized bowl, add granulated sugar, salt and baking soda. Knead everything thoroughly with a whisk so that all the bulk ingredients dissolve and the kefir begins to foam. Soda must be added to kefir, and not when adding dough, since it is well quenched by kefir.

Then add vegetable oil and mix again with a whisk.

Pour half the flour sifted through a sieve into a bowl and knead thoroughly using a wooden spoon. The dough should be as soft as feathers, so add flour gradually. Continue adding flour until the dough reaches the desired consistency. It may take a little more or a little less flour.

When the dough comes together into a ball, transfer it to a floured work surface and knead it with your hands. The dough should feel like yeast dough and be slightly sticky. The quick kefir dough without yeast is ready, you can start working with it right away, but I recommend letting it rest for 10-15 minutes, covered with a towel.
