Basic:

Onion 1 pc
Salt to taste
Ground hot pepper to taste
Water 0.5 cup
Potato 600 g
Bay leaf 1 pc
Tomato paste 1 tbsp
Vegetable oil 2 tbsp

How to stew potatoes in a frying pan without meat? Prepare your food. Wash and peel the potatoes. It’s more convenient for me to do this with a special vegetable peeler. But you can also use a small sharp knife. Cut the peeled potatoes into medium-sized cubes. Pour vegetable oil into the frying pan and heat it. Transfer the potatoes to the pan. Reduce heat to medium.

Peel the onion and finely chop it. Place the chopped onion in the pan with the potatoes. If the onion is difficult to peel, you can put it in warm water for a few minutes.

Add tomato paste to potatoes and onions. Salt and pepper the potatoes to taste. You can replace tomato paste with ketchup with a natural composition (without dyes, flavors and flavor enhancers). You can skip adding the paste altogether by skipping this step.

Add half a glass of water at room temperature to the pan and mix the future dish thoroughly. I recommend using bottled or filtered water.

Add bay leaf to the pan and simmer the potatoes over low heat for half an hour with the lid closed. If necessary, you can add a little cold water during the cooking process so that the potatoes are stewed and not fried. For the same reason, potatoes need to be stirred periodically.
