Sugar 1 tsp
Pepper to taste
Carrot 1 pc
Vegetable oil 2 tbsp
Tomato juice 350 ml
Chickpeas 1 cup

How to make chickpeas stewed with vegetables in a frying pan? Prepare all the necessary products. Instead of tomato juice, I used pureed tomato pulp. You can add other vegetables — bell peppers, zucchini, and eggplant work well. To brighten the taste of the dish, add garlic and your favorite spices.

Fill the chickpeas with water so that it is 2 cm higher than it and leave to soak for 8 hours.

Over time, the chickpeas will absorb almost all the water. Add about another glass of water and put on fire. Cook the chickpeas for about an hour. It should become soft. Add a little salt during the process. When the chickpeas are ready, drain the remaining water.

Peel the onion and cut into small cubes.

Wash the carrots, peel and grate on a coarse grater.

Add tomato juice to the vegetables, add sugar, salt and pepper. Stir. Fry everything together for about 5 more minutes.

Add boiled chickpeas to the pan and stir.

Cover the pan with a lid and simmer the chickpeas and vegetables for about 20 minutes. The exact time depends on the selected frying pan and the operating characteristics of your stove. Then turn off the heat and let the dish sit for about 2 hours. Sprinkle the finished dish with fresh herbs. Bon appetit!
