Ingredients (2 portions)

Basic:

Powdered sugar 200 g
Syrup (vanilla flavoring — a couple of drops) 1 ml
Egg whites 40 g
Lemon acid (1 pinch) to taste
Jam (raspberry jam — 5 tbsp; jam with wild berries — 5 tbsp.) 10 tbsp
Food coloring (1-2 drops of each color) 4 ml

First, prepare the pastry bags. To do this, cut off the corners and if the envelope is too large, then make it smaller. This is done so that the air comes out and when the protein mass is applied, it goes deep into the bag and it is easy to tie it. It is better not to use attachments, since the protein mass dries quickly, and the dried mixture will be difficult to remove from the attachment.

Now letʼs start making fake macarons. Add the whites to a container, then add citric acid to the same container. Using a mixer, mix the whites with the acid for just a few seconds, just so that the acid disperses and the whites become more homogeneous.

Then add powdered sugar into the same container in several additions, after sifting it through a sieve (in 3-4 additions). Continue mixing all ingredients using a mixer. It is best to use high-quality powder so that it is not “sand”, but very finely ground.

Next, add 1-2 drops of vanilla flavoring to the resulting mass and gently knead the mass. After kneading, air bubbles form in the protein-sugar mass. Therefore, the container with the contents must be knocked several times, either on the table (but this is too loud and the furniture is a pity), or, for example, on the knee. Gently stir the glaze again.

Immediately paint the mixture in any colors you like, after transferring it into several containers and adding a specific color to each container. Add the dye using a skewer, namely, first dip the skewer a little into the dye, and then dip this skewer into the protein-sugar mixture. If necessary, make the color more intense, you can add a few more drops of dye and mix again.

Now transfer the finished colored mixture into pastry bags and tighten them tightly with tape. I used 4 colors.

In bags, cut off larger corners to make it easier to squeeze out the mass. Place baking paper on a baking sheet and squeeze the colored mixture from the bags onto it so that you get small circles. Place the baking sheet in the oven at 180°C and bake until only the top crust has formed; immediately remove the baking sheet from the oven. Let the colored circles cool.

Now take one circle and place berry jam (raspberry or wild berries) on it in the center, cover with a second circle on top. This way, collect all the fake macarons.
