Oven-Baked Fish Pita Pockets

Crispy crust and juicy filling — incredibly tasty! Fish in pita bread baked in the oven is easy and simple to prepare. You wrap the pollock filling in a thin pita sheet and the technique does the rest. These envelopes can be prepared in advance and, when heated at the right time, make for a tasty and quick snack!

Ingredients (2 portions)

Basic:

Tomatoes (small) 2 pc
Salt to taste
Lemon juice 0.5 tsp
Sour cream 50 g
Bulb onions (small onion) 1 pc
Mayonnaise 25 g
Basil (dry) 0.3 tsp
Lavash thin (Armenian) 150 g
Pollock fillet (Or any other fish. I have pollock.) 150 g

How to bake pollock fish in pita bread in the oven? Prepare the necessary products. I used 2 sheets of thin Armenian lavash. Any fish fillet will do. Divide the fillet into two parts. Choose spices and seasonings according to taste and desire.

If the pollock fish fillet is frozen, defrost it in advance in the refrigerator or at room temperature. Wash the fillet and dry well. Salt the fillet on both sides, sprinkle with spices and seasonings to taste. I used dried basil. Sprinkle the fillets with lemon juice and leave to marinate for 10-15 minutes.

In a small bowl, combine sour cream and mayonnaise and stir. The proportions of sour cream and mayonnaise can be changed according to your taste preferences.

Wash the tomatoes and dry them. Cut the tomatoes into medium-thick slices.

Cut the pre-peeled onions into rings.

Place onion rings on the bottom edge of the lavash sheet, slightly overlapping.

Place a piece of fish fillet on top of the onion. Brush the fillet with a mixture of sour cream and mayonnaise.

Cover the pollock fillet with tomato slices.

Wrap the filling in pita bread, giving it the shape of an envelope. Similarly form the second envelope with fish filling.

Lightly grease the bottom of the mold with vegetable oil. Place the prepared lavash envelopes into the mold. Top them with the remaining mixture of sour cream and mayonnaise.

Bake the fish in pita bread in an oven preheated to 180C for about 30 minutes. For the first 20 minutes, cover the top of the fish in the pita bread with foil to prevent the top from browning too much. Then remove the foil and cook until golden brown. Cooking time may vary, as it depends on the operating characteristics of the oven.
