Recipe instructions

Step 1

Step 1
How to make a vegetable salad on the grill? Light a fire in the grill. Wait until the coals burn out, then place the grate on the grill to heat up.

Step 2

Step 2
Wash the tomatoes, bell peppers and zucchini. It is better to use small young zucchini. Peel the shallots and cut them in half (you can use small onions). Cut the zucchini in half as well. Place vegetables on a wire rack over high heat.

Step 3

Step 3
Vegetables cook very quickly. The tomatoes will be ready in just a few seconds; leave the peppers and onions on the grill a little longer. The zucchini will take a couple of minutes to cook. Vegetables must be constantly turned over with tongs to prevent them from burning.

Step 4

Step 4
Remove the tomatoes, onions and peppers from the grill (the peppers can be placed in a plastic bag for a few minutes and then easily peeled off).

Step 5

Step 5
A little later, remove the zucchini from the grill. Cool the vegetables slightly.

Step 6

Step 6
Cut the pepper into rings, remove some of the seeds and leave some as desired.

Step 7

Step 7
Cut the zucchini as desired, into slices or thick strips.

Step 8

Step 8
Cut the shallots into half rings or feathers, leave the tomatoes as is, remove the stalk if present.

Step 9

Step 9
Peel the garlic and chop finely.

Step 10

Step 10
Also chop the greens into small pieces. Dill, parsley and green onions are good for salad.

Step 11

Step 11
Place the vegetables in a salad bowl, add herbs and garlic on top. Sprinkle with ground red pepper and allspice and salt to taste.

Step 12

Step 12
Season with vegetable oil (you can also use olive oil).

Step 13

Step 13
Mix the salad very carefully with a large spoon so as not to crush the tomatoes. Let sit for a few minutes and serve.
