Mozzarella, Crouton & Tangerine Salad

Delicious, bright, with chicken fillet and sweet corn! Jealous salad with mozzarella, croutons and tangerines is prepared simply and quickly. The vegetables make it light and filling at the same time. This salad can be served not only for lunch, it will decorate any holiday table.

Ingredients (5 portions)

Basic:

Garlic 1 clove
Salt to taste
Mozzarella 100 g
Water 50 ml
Bun 100 g
Vegetable oil 3 tbsp
Dry spices 0.25 tsp
Mayonnaise 2 tbsp
bell pepper 0.5 pc
Greenery to taste
Chicken fillet 200 g
Sesame 1 tbsp
Canned corn 2 tbsp
Chinese cabbage 150 g
Tangerines 0.25 pc

How to make Jealous salad with mozzarella? Prepare all ingredients. Wash vegetables and herbs thoroughly and dry. You can simply buy salad croutons in the store, but they still taste better when they are made at home. Any white bread will do for this, but stale bread is easiest to slice.

Cut the crackers as you like, I prefer cutting into strips. Pour two tablespoons of vegetable oil into a frying pan and heat. Add sliced bread, salt and sprinkle with seasoning to your liking, I used adjika. Fry the crackers over medium heat until browned. Add grated garlic, stir and fry for a couple more minutes. Remove the crackers from the heat and cool.

Chicken fillet, I used breasts, rinse, dry and cut into strips. Sprinkle with sesame seeds and stir.

Pour the remaining vegetable oil into the frying pan and heat over medium heat. Add the chopped chicken and fry for 5 minutes. Add 50 milliliters of water and simmer until the water evaporates and the meat is cooked. Remove from heat and cool.

Chop the Chinese cabbage into strips and place in a bowl.

Remove the seeds from the bell pepper and cut into thin strips. Add it to the bowl with the cabbage.

Drain canned corn and add to salad. If you do not use the corn right away, remove it with a spoon to remove the foam, and pour the rest, if in a tin, into a glass jar. For spiciness, you can add chopped half an onion.

Mix everything and pour over tangerine juice. This will give the salad a light aroma and piquancy.

Add the cooled chicken fillet to the bowl with the salad and stir to combine.

Transfer the salad to a serving plate and arrange the mozzarella. Mini mozzarella is best for this salad, but if you don’t have one, just cut the regular one.

Pour mayonnaise on top. If the salad will be served on a holiday table, do not season it right away, but simply make a grid on the surface. This way the salad will look more attractive, will not yield juice and will not spoil longer. It is better to place the mayonnaise next to it in a separate bowl.
