Omelette Chicken Salad

Ingredients (6 portions)

Basic:

Salt to taste
Pepper to taste
Eggs 3 pc
Vegetable oil (for frying omelettes) 1 tbsp
Mayonnaise 3 tbsp
cucumbers 300 g
Chicken fillet 500 g
Green pea (canned) 150 g
Canned corn 150 g

Wash the chicken fillet and let it cook. After boiling, cook for 20 minutes, add salt and pepper to taste.

In the meantime, get busy with the omelet pancakes for the salad. Break one egg into a bowl, add salt and pepper, and shake well with a fork.

Heat a frying pan, add a little vegetable oil. Then pour in the omelette mixture and spread in a circular motion over the entire diameter of the pan. Fry, turn over to the other side and cook until done. Do the same with the rest of the eggs. In total, for our portion of salad we fry 3 omelet pancakes.

transfer to a plate and let cool.

Cut the cucumbers (if the peel is young and thin, leave it, if it’s hard, it’s better to cut it off) into small cubes.

Drain the liquid from the corn and peas and place in a salad bowl along with the chopped cucumbers.

Roll the cooled pancakes into a tube and cut into strips.

Add the omelette strips to the salad bowl.

Cooked and cooled chicken fillet needs to be chopped. Choose the method yourself — you can cut it into cubes, or you can tear it into fibers with your hands.

Add the fillet to the salad bowl. Salt and pepper to taste. Season the salad with mayonnaise. You can mix mayonnaise and sour cream in equal proportions — this will make the salad even more tender. If you want to reduce the calorie content of the dish, you can season it with low-fat yogurt.

Stir the salad and serve immediately — it does not need additional soaking.
