Ingredients (4 portions)

Basic:

Onion 0.5 pc
Salt to taste
Ground black pepper to taste
Vegetable oil 5 tbsp
Greenery to taste

Cherry tomatoes 200 g
Shrimps 200 g
Canned corn 150 g
Iceberg lettuce 150 g
Pine nuts 50 g

How to make a salad with shrimp and pine nuts? Prepare all the products indicated in the recipe. I had shrimp marinated in oil, garlic and herbs, but you can also use regular ones. Instead of iceberg, you can use any lettuce. Romaine, arugula, frisse, corn, lettuce or lollo rossa are perfect.

Rinse the lettuce under running water and dry thoroughly with paper towels. There should be no excess moisture left on the leaves, this is very important. Cut the iceberg into thick strips or cubes, whichever you prefer. Place in the first layer on a wide plate.

Rinse the tomatoes, dry and cut into two to four pieces. If you have very small cherries, then some of them can be left whole. For the salad, you can use regular tomatoes, cut into slices or cubes. Add tomatoes to lettuce.

Lightly fry the pine nuts in a dry, heated frying pan. Then cool them.

Drain the juice from the corn. Place the grains on top of the tomatoes.

Peel the onion and cut into thin feathers. Red or white lettuce onions are ideal for vegetable salads. You can use shallots. Boil the shrimp until tender, peel the shell, remove the tails and heads, then cool. Place the onions and shrimp in a salad bowl.

Sprinkle pine nuts on top.

Salt the salad to taste, pepper if desired and sprinkle with lemon juice. Sprinkle with finely chopped herbs. I used parsley and dill. Drizzle with vegetable or olive oil. The salad is ready, serve!
