Bright, fresh, crispy, super easy and quick! Cucumber and walnut salad is a recipe made from three ingredients, which, due to different tastes, create a very interesting and original combination. The salad will serve as an excellent snack or addition to any other dish.

Ingredients (2 portions)

Basic:

Onion (red) 1 pc
Salt to taste
Ground black pepper to taste
Walnuts 50 g
Vegetable oil 2 tbsp
Lemons (juice) 0.5 pc
cucumbers (two medium or one large) 2 pc

How to make a salad from cucumbers and walnuts? Prepare your food. You will need either two medium cucumbers or one large one. Any onion will do, I took red one — it is sweeter and better suited for salads. Take the nuts either already peeled, or peel them yourself.

Wash the onion, peel and cut into thin feathers.

To prevent onions from becoming bitter in your salad, soak them in ice water for 10 minutes. You can add table or wine vinegar to the water, then the onions will acquire a slight aftertaste. Or, conversely, you can scald the onion with boiling water — this will also remove the bitterness, but the onion will become soft and will not crunch. Choose for yourself, according to your taste.

Place the walnuts in a dry frying pan and place over low heat. Dry them, stirring, until slightly crispy and pleasantly fragrant. Then cut into small pieces.

Wash the cucumbers, cut off the ends and cut into large pieces. Be sure to try to see if they are bitter — such fruits will ruin the taste of the entire salad. If the skin of the cucumbers is thick and rough, cut it off.

Place the onion in a sieve and then place on a paper towel to absorb excess moisture. Pat the onion dry on all sides.

Place cucumber slices on a flat dish and place onion feathers and nuts on top. Sprinkle the salad with lemon juice; you can use wine vinegar instead. Salt and pepper to taste. Pour oil over the salad, any vegetable oil, I used olive oil.

Serve it to the table immediately — a salad made from fresh vegetables should not sit for a long time, because it may release juice. Bon appetit!
