Hearty Chicken Gizzard Salad with Onions and Mushrooms

Champignon 200 g
Salted cucumbers 4 pc
Mayonnaise 2 tbsp
Green pea 200 g

How to make a salad of chicken gizzards with onions? Prepare your food. Boil chicken stomachs first. How to do this is described at the end of the recipe.

Peel the onion and cut into small cubes. To prevent onion juice from irritating your eyes so much, rinse your knives and onion with cold water before slicing. Rinse the champignons to remove any soil. Dry thoroughly, otherwise the mushrooms will become watery. Do champignons need to be peeled? It is enough to rinse small mushrooms well; it is better to clean larger ones by removing the films from the caps. Also cut off any darkened sections on the stems. Cut the mushrooms into small pieces.

Pour vegetable oil with a high smoking point into a frying pan and heat well. Fry, stirring, the onion until transparent, add the champignons, salt, pepper and fry until the mushrooms are completely cooked (about 5-7 minutes, until the liquid has evaporated).

Cut the boiled chicken gizzards into small pieces. The salad will look beautiful and neat if you cut all the ingredients into pieces of the same size and shape (for example, cubes).

Boil hard-boiled eggs. How to hard boil eggs? To prevent eggs from cracking during cooking, place them in cold water and cook over low heat. Boil the eggs for 9 minutes after boiling, then cover with cold water and cool. The shell will be better cleaned from a sharp temperature change. Peel the eggs and cut into small cubes.

In a salad bowl of a suitable size, mix all the prepared ingredients — eggs, onions with champignons, chicken gizzards, cucumbers. Season with mayonnaise, salt and pepper to taste and stir.
