Sunny Delight Salad

Nourishing, appetizing, original. This salad will decorate your table! This salad has a spicy taste due to Korean carrots and pickled cucumbers. A characteristic feature of the salad is that it is decorated with pancake rolls on top, which gives the dish an elegant and original look. The salad is quite filling, thanks to the meat and chicken, eggs and pancakes included in its composition. Some housewives add chopped dill to the salad itself, and some to the pancake dough. Choose what you like best. Not all cooks put boiled eggs in this dish, limiting themselves to the fact that the eggs are part of the pancake batter. I like it better when boiled eggs are present in the salad, they make it more tender. There is one more point. Some housewives cut some of the pancakes into a salad with noodles, while others only decorate the surface of the salad with pancake rolls. One way or another, this salad is very tasty and nutritious. By the way, its name is translated from Tatar as “Sun” or “Sunny”. Try Koyash salad and your mood will become warmer, that is, it will improve!

Ingredients (10 portions)

For the salad:

Chicken fillet 200 g
Beef 200 g
Chicken eggs 3 pc
Korean carrots 300 g
Bulb onions 1 pc
Vegetable oil 2 tbsp
Garlic 1 clove
Pickles 5 pc
Walnuts 50 g
Dill 0.5 g
Sour cream 200 g
Salt to taste

For pancakes:

Wheat flour 0.25 cup
Milk 0.5 cup
Chicken eggs 1 pc
Vegetable oil 1 tbsp
Salt to taste

We start preparing the salad by making the dough for pancakes from the products shown in the photo. Beat the egg, pour in milk, 1 tbsp. vegetable oil, add salt, add sifted flour, mix thoroughly until smooth. You should get a liquid batter for pancakes. We bake pancakes in a hot frying pan, greasing its bottom with a thin layer of vegetable oil. From this portion of dough I got 4 pancakes.

Products needed to prepare Koyash salad. The pancakes are cooled. The dill has been sorted and washed. Walnuts are pre-fried in a frying pan without oil and cooled. Chicken fillet and beef are boiled and cooled. Chicken eggs are boiled, shelled and cooled. You can buy Korean carrots, or you can cook them yourself. I prepared it as described in the recipe for Squid Salad with Korean Carrots posted on this site.

If the onion is large, cut it into quarter rings, if medium — into half rings.

Fry the onion until golden brown in the same frying pan where the pancakes were baked, in vegetable oil.

We cut the beef and chicken fillet into strips.

We cut pickled or pickled cucumbers, eggs into strips, and chop the dill. Squeeze the cucumbers a little to remove excess juice.

Finely chop the walnuts, prepare sour cream and Korean carrots.

In a deep bowl, mix all ingredients except pancakes. Letʼs taste it. If necessary, add salt. Mix.

We cut each pancake into strips of approximately the same width, so that we can then roll them into rolls and a little later decorate the finished salad with them.

Place the prepared Koyash on a dish and sprinkle it with chopped nuts.

Decorate the salad with pancake rolls on top. The salad seemed pale to me in this form, so I added dill and strips cut from tomatoes. If you want to cover the entire surface of the salad with pancake rolls, make 2 portions of pancake dough. Thatʼs it, Koyash is ready! It is especially good slightly chilled.
