Break the eggs into a bowl. Salt, pepper and whisk until smooth. You can add 1 tbsp to the egg mixture. l. flour and mix. If you wish, you can beat the eggs with the addition of milk, cream or mayonnaise. With milk or cream, pancakes are more delicate in taste and texture. With mayonnaise, the pancakes will turn out a little salty and more elastic. Therefore, you can choose for yourself which result you need most.

In a frying pan in vegetable oil, fry 3-4 thin pancakes on both sides until golden brown. In my experience, it is more convenient to bake such pancakes in a small-diameter frying pan. Because unlike regular flour pancakes, egg pancakes are more tender and, with a large diameter, can tear during turning.

Transfer the finished egg pancakes to a plate and cool. Then cut into strips.
