Ingredients (4 portions)

For the salad::

Pork liver 300 g
Korean carrots 150 g
Eggs 3 pc
Pickles 3 pc
Onion 1 pc
Mayonnaise 50 g
Greenery to taste

For cooking liver::

Water 1 l
Bay leaf 1 pc
Peppercorns to taste

For pickling onions:

Vinegar 1 tbsp
Water 4 tbsp

How to make a salad with liver and Korean carrots? Prepare the necessary ingredients for this. To prepare the salad, you can use any type of liver. I take pork liver. Boil the eggs in boiling water for 7-8 minutes. Then drain the hot water and cool the eggs in cold water.

For the salad, the liver must be boiled in advance. Bring the water to a boil. Add a few peppercorns and a bay leaf to it. Dip the washed liver into boiling water. Bring everything to a boil again. Cook over low heat for 30-40 minutes (depending on the thickness and size of the piece). At the end of cooking, add a little salt. The finished liver will be uniformly gray when broken. Cool the liver completely.

Peel the onion and rinse in cold water. Cut the onion into half rings or a little smaller. Pour vinegar and water and leave to marinate while the liver cooks. Then drain all the liquid from the onion.

Peel the cooled eggs from their shells. Cut the liver into strips and place in a bowl in which you will prepare the salad.

Also cut the pickled cucumbers into strips. Send them into the bowl to the liver.

Add Korean carrots and chopped boiled eggs to the salad. It is very convenient to cut eggs using an egg slicer.

Finely chop the fresh herbs. It could be dill, parsley or green onions. Season all ingredients with mayonnaise and mix.
