Festive Rooster Herring Salad

A herring under a fur coat, but not an ordinary one, but one that brings good luck in the new year! Herring under a fur coat is a traditional dish on the New Yearʼs table. Our family loves it very much and we cook it every year — it doesn’t get boring at all. This time I suggest serving it in a special way — decorate the salad with the image of the Rooster — the owner of the next year. And this should definitely contribute to good luck in the future :)

Ingredients (8 portions)

Basic:

Potato 300 g
Beet 250 g
Carrot 100 g
Bulb onions 140 g
Mayonnaise 120 g
Dill (For decoration) to taste
Chicken eggs 4 pc
Herring (salty) 300 g

Recipe instructions

Boil potatoes, carrots, beets and eggs. Cool. Peel the vegetables. Remove the shell from the eggs. The onion also needs to be peeled.

Cut and clean the herring. Remove all bones from the fillet.

Cut the fish fillet into small cubes. But don’t make it too small — it’s better if the pieces are medium in size. Distribute the chopped herring evenly over the bottom of the salad bowl.

Finely chop the onion and place it in a layer on top of the herring. Leave a half ring of onion to decorate the finished salad.

Grate the peeled potatoes on a coarse grater over the onion.

Brush the potatoes with half the mayonnaise.

Grate three eggs into mayonnaise.

The next layer is grated carrots. Using gentle movements, spread it evenly over the egg layer. Set a small piece of carrot aside.

Grate the beets onto the carrots, leaving a small part intact.

Coat the resulting salad with the remaining mayonnaise.

Grate the vegetable pieces set aside for later on a coarse grater. First cut two circles from the carrots.

Rub the yolk and form the contours of a rooster on the surface of the salad. Cut the carrot slices in half. Place three halves on the roosterʼs head — this will be the comb. From the fourth you need to cut out two triangles — a small one and a large one. Make a beak out of the smaller one, place the second one under the beak upside down — you get a beard.

Place part of the tail and eyes from the beets.

Use grated carrots to form the middle part of the cockerelʼs tail; a half ring of onion will go to the lower part.

From the remaining protein you need to cut out ovals — rooster wings. Garnish the salad with dill sprigs. The herring under a fur coat with the image of the symbol of the coming year is ready! Place the salad in the refrigerator to cool for at least 2 hours.
