How to make a salad from boiled carrots? Prepare all the necessary ingredients. This salad tastes best in the fall from fresh carrots. It is more juicy and aromatic. You can use any vegetable oil of your choice. I use dried hot pepper, but you can finely chop a fresh pod and add it to taste.

Wash the carrots with a brush under running water, peel and rinse. Cut into rings of at least 0.5 centimeters, otherwise it will be overcooked and will be wadded in the salad. My carrot was plump, so I first cut it lengthwise into two equal parts.

Pour 0.5 liters of water into a saucepan and place over medium heat. Bring to a boil, add salt. Place the chopped carrots in the water and cook for about 6 minutes. Check the readiness of the carrots by piercing a piece with a sharp knife; it should easily pierce the vegetable. Remove from heat, drain the broth and immediately rinse with cold water. This is necessary so that the carrots stop cooking from the inside and do not become too soft. Let the water drain completely and transfer it to a bowl.

Squeeze lemon juice into a bowl with boiled carrots, pour in vegetable oil, add salt and stir.

Sprinkle the salad with ground paprika and stir. You can use not only plain paprika, but smoked paprika will also fit perfectly here. It will give the salad a light smoky flavor.

Add black and hot peppers to the salad to taste, stir. Add pepper carefully, especially if it is not powdered, but pieces. The salad will continue to infuse and the spiciness will intensify. You can use your other favorite spices if you wish.
