Recipe instructions

Step 1

Step 1
How to make a salad with roast beef and tomatoes? Prepare all the necessary ingredients. I made a salad from leftover roast beef* that I had cooked the day before. You can also use store-bought roast beef.

Step 2

Step 2
Wash the tomatoes, dry and cut into slices. For this salad, choose tomatoes that are strong, dense, so they donʼt fall apart while stirring, but arenʼt green either. Tomatoes on the vine or plum are great.

Step 3

Step 3
Cut the roast beef into small, uniform pieces or strips.

Step 4

Step 4
Wash the arugula and let dry. Tear large leaves with your hands, leave small ones as is. In addition to arugula, you can take any other greens to your taste — dill, parsley and basil.

Step 5

Step 5
Place pieces of roast beef, tomatoes and arugula in a salad bowl. Drizzle the salad with olive oil and lemon juice. Add salt and pepper to taste and mix gently, being careful not to crush the tomatoes. You need to pepper and salt the salad carefully, since usually roast beef is already quite saturated with spices along the outer edge. Therefore, first try what meat tastes like and add your spices based on this.

Step 6

Step 6
Place the salad with roast beef, vegetables and arugula on a platter and serve. If desired, you can serve it warm. If you cook roast beef yourself, you can immediately cut off as much as you need for the salad from the finished, still warm piece. If you want to make a warm salad from yesterdayʼs roast beef, you can simply cut the meat into pieces and heat it a little in a frying pan or in the microwave. Bon appetit!
