How to make quick, crispy marinated cabbage in a jar? Prepare all the necessary ingredients. White cabbage is suitable, take medium-sized carrots. I will use frozen carrot stock. It is better to take coarse or medium table salt. It makes cabbage tastier and lasts longer.

Start by preparing your cabbage veggies in an Instant Pot. Peel the cabbage from the limp outer leaves, rinse well and dry, placing on cotton or paper towels. Finely chop with a knife or food processor, removing the stalk and hard leaf stems. When cut this way, cabbage looks appetizing and cooks faster. Place in a deep bowl so that it is convenient to mix the cabbage and carrots.

Peel and rinse the carrots. Grate the carrots on a coarse grater. In this form, it will marinate faster and give the cabbage a sweetish note.

Add the chopped carrots to the cabbage and mix well until smooth. Transfer the vegetables to a clean three-liter glass jar. For marinating, you can use another container with a volume of at least 3 liters. The material from which it is made must not oxidize. Enameled, ceramic and glassware are ideal. If you plan to store cabbage for a long time, the jar must be sterilized.

Cook the marinade. To do this, boil water in a saucepan with a volume of at least 1 liter over high heat. After the water boils, turn the heat to medium, add salt, sugar, vinegar, oil to the water and mix well until the salt and sugar are completely dissolved. Bring to a boil again and remove from heat.

Pour the hot marinade over the cabbage in a jar in a quick way. Pack the vegetables so that they are completely covered in the marinade, otherwise they will marinate unevenly. Cover with a lid and refrigerate for 12 hours. After the specified time, our crispy cabbage with vinegar is ready.
