Quick and Tasty Red Bell Pepper Salad

Light, healthy, with tomatoes and beans, very tasty! Red bell pepper salad is quick and easy to prepare. All the time is spent chopping the ingredients, and then mixing everything together, and it’s done! You can serve it as an appetizer for the main lunch dishes, or have it as a snack at breakfast or dinner.

Ingredients (2 portions)

Basic:

Olive oil 1 tbsp
Salt to taste
Ground black pepper to taste
White wine vinegar 1 tsp
bell pepper (red) 1 pc
Pineapples (fresh or canned) 30 g
Cherry tomatoes 50 g
Lettuce leaves (I have frillis) 50 g
Canned beans (red) 30 g

How to make a salad with red bell pepper? Measure out the ingredients you need. Drain the liquid from the canned beans and place the beans in a colander (by the way, you can make mayonnaise from the drained liquid, aquafaba). Wash the vegetables and herbs thoroughly and dry them.

Cut the bell pepper in half, remove the seeds and stem and cut into small pieces.

Cut the pineapples into small pieces. If you have canned ones, let the juice drain from them so that your salad doesn’t end up floating. If you donʼt like pineapples, replace them with something else that is juicy and sour. Or remove it completely without replacing it with anything.

Cut the cherry tomatoes into two halves each.

In a salad bowl, combine all the chopped products: bell peppers, pineapples, cherry tomatoes — and beans. Tear fresh herbs into small pieces with your hands and add to the salad.

Drizzle the salad with olive oil. Instead of olive oil, you can use any vegetable according to your taste.

Season the salad with wine vinegar. By the way, you can mix the salad dressing in advance in a separate bowl and add salt, ground pepper and spices to it.
