Avocado Chicken Salad with Cherry Tomatoes and Fresh Herbs

Spring-summer salad with chicken breast, vegetables and herbs. If you have some greens and cherry tomatoes left, you can make this hearty salad with chicken breast. For meat salads, balsamic sauce or 1 tsp is suitable as a dressing. balsamic vinegar mixed with olive oil and honey.

Basic:

Salt to taste

Lemon juice 2 tbsp
Paprika 1 tsp
Chicken fillet 250 g
Cherry tomatoes 100 g
Avocado 1 pc
Lettuce leaves 150 g

Prepare the ingredients. To prepare a salad with baked chicken, avocado, tomatoes and herbs, we need: chicken fillet, avocado, cherry tomatoes, salad mix (I have Tuscany), vegetable oil, paprika, ground black pepper and salt.

Wash the chicken fillet and dry it. Grease with vegetable oil, salt, pepper and sprinkle with paprika.

Wrap the fillet in foil and bake in the oven at 180°C for about 40 minutes until cooked.

Remove the finished fillet from the foil, cool and cut into small slices.

Cut the avocado in half lengthwise, remove the pit, then peel off the skin. It is better to adhere to this particular order: first remove the pit, and then peel it. Because if you peel the fruit first, it will become too slippery and you could cut yourself when trying to remove the pit. Cut the pulp into small slices and immediately sprinkle with lemon juice.

Wash and dry the salad mixture. I added some fresh arugula to the salad mixture.

Refueling. To prepare the dressing we will need: olive oil and liquid honey. If the honey is candied, you can preheat it and melt it.

Mix honey with olive oil and beat thoroughly until smooth.

Place the salad mixture on the dish. Place baked chicken slices in the center.

Add tomato quarters and avocado slices.
