Quick & Easy Squid and Onion Salad

Delicious, quick and easy, made from ordinary ingredients! Salad with pickled squid and onions is a recipe for an easy-to-prepare cold appetizer. This salad will be a great addition to a holiday or everyday dinner. Thanks to short heat treatment, the squid remains very soft.

Basic:

Onion 1 pc
Olive oil 1 tbsp
Salt to taste
Bay leaf 1 pc
Vinegar (9%) 2 tbsp
Squid carcass 2 pc

How to make a salad with marinated squid and onions? Prepare your food. Squid is usually sold frozen; first defrost it naturally. You can use regular onions or red salad onions, I like salad ones better. Any vegetable oil will do, I used olive oil. Prepare a small saucepan, pour water into it and heat it on the fire.

Peel the squid and remove the insides. Rinse each carcass under cold running water. As soon as the water in the pan boils, add the bay leaf to it. Place the squid carcass in boiling water for 30-40 seconds from the moment it boils, then remove it and place it on a plate. You donʼt need to cook the squid for long — it can turn rubbery. As soon as the water boils again, also boil the other carcass. Let the squid cool completely.

Cut the cooled squid carcasses into long strips and place in a deep bowl.

Peel the onion and cut into half rings. Add chopped onion to squid.

Add salt to taste, vinegar and vegetable or olive oil to the bowl. Mix the salad thoroughly and marinate in the refrigerator for a couple of hours. During this time, I would also recommend stirring the salad several times so that all the ingredients are soaked evenly.

Serve the finished salad chilled. It will be a great addition to many dishes — potatoes, rice, vegetables. Bon appetit!
