Tomato & Mozzarella Salad: Fresh and Hearty

Bright, light, vitamin-packed for every day! Salad with mozzarella cheese and cherry tomatoes will be an excellent addition to meat dishes, potatoes or boiled cereals. And if you are watching your figure, then it can serve as a light, and due to the mozzarella, also a hearty dinner.

Basic:

Olive oil (or vegetable) 4 tbsp

Arugula 60 g
bell pepper 1 pc
Greenery to taste

How to make a salad with mozzarella cheese and cherry tomatoes? Prepare all the necessary ingredients. Instead of arugula, you can use field lettuce, iceberg or romaine lettuce, and spinach in the recipe. They all go very well with tomatoes and cheese. Rinse the leaves under running water and dry with paper towels. If you donʼt have cherry tomatoes, you can use regular ones.

Drain the brine from the cheese. I used mini mozzarella cheese balls in the recipe, if you have a large ball, cut it into small cubes. Wash the bell pepper, dry it, cut it in half, remove the seeds and stem, and cut into strips. Peel the onion. For the salad, I would recommend using shallots or white lettuce; they have a milder taste and are ideal for vegetable mixes. Rinse tomatoes, herbs and lemon in clean water.

Take a large flat dish or salad bowl and place arugula as the first layer, then place the next layer on top — bell peppers.

Cut the onion in half and cut each half into feathers. You can cut the onion into thin rings or half rings, as you prefer, and add to the salad.

Cut the cherry tomatoes into halves, leaving a few tomatoes whole for beauty. Add cherry tomatoes to the rest of the salad ingredients.

There are finishing touches left, put the mozzarella in the salad bowl. If you have mini balls of cheese, then a few pieces can be cut into halves in the same way as cherry tomatoes.

Salt the salad to taste, sprinkle with ground pepper if desired. I usually use allspice and red bell pepper. Drizzle olive oil over top and add fresh lemon juice if desired (you can use lime instead of lemon).

Add finely chopped greens to the salad with tomatoes and mozzarella cheese. Dill, parsley or basil are great. I sometimes add garlic, finely chopped by hand, to all the ingredients, you can use it too if you wish. Bon appetit!
