How to make a salad with beets and cucumbers? Prepare your ingredients. It is better to choose young, fresh and not very large beets. This way it will cook faster and taste better. Wash the beets. There is no need to cut off the skin or anything at all (only the tops, if any). If the beets are large, do not cut them in half under any circumstances, otherwise all the juice will boil out of them and at the end of cooking you will get bright burgundy water and pale pinkish vegetables.

Place the beets in a saucepan, add water and put on fire. Bring the water to a boil and cook the beets over medium heat for 1-1.5 hours, depending on the size of the vegetables. After an hour of cooking, check the beets for doneness by piercing them halfway through with a knife. If the knife easily reaches the middle of the vegetable, then the beets are ready. If you feel resistance, then cook further.

Cool the finished beets, peel them and cut into small cubes or grate on a coarse grater. !!! To speed up the process and avoid cooking beets at home, you can buy whole boiled, peeled beets in sealed packaging in supermarkets. And in large hypermarkets you can even find it by weight, cut into strips or cubes.

Wash the cucumbers, dry and cut into small cubes.

Grate the cheese on a coarse grater. You can also cut the cheese into small cubes, just like the vegetables. Use cheese according to your taste. This can be ordinary cheese such as “Russian” or “Poshekhonsky”, as well as mozzarella or processed cheese (“Druzhba”, “Yantar”). I use regular "Russian" cheese.

Combine beets, cucumbers and cheese in a salad bowl.

Season the salad with mayonnaise and mix. If desired, you can pepper and salt the salad. I usually donʼt add extra spices to salads with mayonnaise. You can instead of 2 tbsp. l. mayonnaise take 1 tbsp. l. mayonnaise and 1 tbsp. l. rich sour cream — the salad will be more tender. If you adhere to PP, then it is better to replace mayonnaise with less fatty dressings.
