Zucchini and Tomato Sauté (Onion-Free Option)

Great vegetarian dish! Incredibly delicious. A very good combination of products. The only thing: I didn’t add onions to the pan because I don’t like them. But in principle it is needed there. Therefore, it is better to immediately fry carrots with chopped onions.

Ingredients (6 portions)

Basic:

Garlic 2 clove
Tomatoes 250 g
Salt to taste
Ground black pepper to taste
Zucchini 400 g
Carrot 1 pc
Vegetable oil 2 tbsp
Dill 15 g

Prepare the ingredients.

Pour boiling water over the tomatoes, remove the skin and chop. Peel the carrots and onions and cut into small pieces. Cut the zucchini into medium cubes. Finely chop the garlic.

Chop the dill.

Heat vegetable oil in a frying pan and fry carrots in it until golden brown.

Place the zucchini in the pan. Fry, stirring, until the zucchini is tender, about 10 minutes.

At the end add salt and pepper.

Add tomatoes to the pan with vegetables. Simmer until excess liquid evaporates.

Finely chop the garlic and dill and add to the pan.
