Onion 1 pc
Garlic 2 clove
Salt to taste
Ground black pepper to taste
Eggs 3 pc
Vegetable oil 5 tbsp
Mayonnaise 1 tbsp
Greenery to taste

How to make eggplant with egg and onion in a frying pan? Prepare all the necessary products. Adjust the amount of garlic to taste.

Wash the eggplants, cut off the stems and peel them.

Cut the blue ones into small cubes or bars, as you prefer. Place in a large, convenient container.

Wash the eggs thoroughly and dry. Beat three eggs into a deep small bowl. Whisk them thoroughly with a whisk or fork until smooth.

Pour the resulting mixture over the eggplants and mix everything very well so that each piece ends up in the egg wash. Cover the bowl with the blue ones with cling film and place in the refrigerator for at least an hour. Stir the eggplants 2-3 times while marinating.

Peel the onion, rinse and chop finely. Heat 2 tbsp in a frying pan. vegetable oil. Send the onions to fry. Cook until light golden brown appears.

Heat the remaining vegetable oil in a separate frying pan. Add the marinated eggplants to the pan and cook, stirring occasionally, for about 15-20 minutes.

The degree of readiness can be determined by the golden hue of the pieces and their softness. During frying, add a little vegetable oil if necessary. A couple of minutes before the end of cooking, salt the blue ones.

Add fried onions and garlic, passed through a press, to the eggplants. Stir.

Add mayonnaise and black pepper to taste. If desired, use a little more/less mayonnaise than indicated in the recipe. Mix everything again.
