Homemade Eel Sushi Rolls

You can easily make your favorite restaurant dish at home! Eel rolls are not at all difficult to prepare, especially if you strictly follow the instructions for cooking rice. Because the rest of the work will consist of twisting the roll itself. If you don’t find eel on sale, feel free to replace it with red fish.

How to make rolls with eel? Prepare your food. Any round rice will do; if you can’t find a special one for sushi, take the most ordinary Krasnodar rice. I have canned eel in oil; I first took it out of the jar and dried it on a towel to remove excess fat. Instead of eel, any smoked or salted fish will do. Instead of rice vinegar, feel free to use 9% table vinegar. Small caviar is either flying fish caviar or the more common capelin caviar.

First of all, boil the rice. How to cook rice for sushi and rolls? Rinse the cereal well and fill with clean cold water. Place on high heat. Cook the rice first over high and then over low heat under the lid until the water has completely boiled away. When no water is visible and “craters” appear on the surface, remove the saucepan from the heat, cover first with a towel and then with a lid — this will allow the rice to absorb all remaining liquid and cook until done.

When the rice has cooled slightly, pour in rice vinegar, in which you have previously dissolved sugar and salt. Stir and leave the rice to cool completely. If desired and available, you can also add 1 tbsp. plum liqueur.

Prepare the ingredients for the filling. Cut the avocado and remove the skin. Cut the pulp into cubes.

Cut off the ends of the cucumber. Cut half a cucumber into thin long slices. If you have a large eel, also cut into strips.

Place half a sheet of nori on the rolling mat, rough side up. With wet hands, spread the rice over the sheet. Make the layer as thin as possible. At the same time, step back a centimeter from the near edge, and from the far edge you will also go beyond the sheet by a centimeter and a half.

Carefully turn the nori over along with the rice so that the rice is on the bottom. Place avocado and cucumber slices on the near edge. Place the eel on top.

Helping yourself with a mat, roll the roll, trying to make it even and round. Use a knife to flatten the sides of the roll. You can cut them, I slam them with a knife.

Take a long dish and place small caviar on it. Roll the roll over it so that the caviar sticks to it on all sides. Cut the resulting roll into 8 pieces. To prevent the rice from sticking to the knife when slicing, moisten it with water.
