Ingredients (8 portions)

Basic:

Garlic 2 clove
Tomatoes (Cream) 8 pc
Salt to taste
Mozzarella 200 g
Pepper (Pepper mixture) to taste
Vegetable oil (for frying) 6 tbsp
Eggplant 4 pc
Basil (Dried) to taste
Tomato sauce 6 tbsp

Peel the eggplants, cut into slices, 5-7 mm thick.

Fry in vegetable oil on both sides.

Meanwhile, chop the tomatoes. Also in circles.

Grate the mozzarella on a coarse grater.

Grease a baking dish with oil, lay out tomato sauce (this time it was sweet and sour), and place a layer of fried eggplants with tomato slices on it. Salt, pepper, sprinkle with chopped garlic and dried herbs to your taste (oregano, thyme, rosemary). I had my own basil.

Sprinkle in half of the grated mozzarella. Add another layer of vegetables, season and sprinkle with the remaining cheese.
