Basic:

Garlic 2 clove
Salt 1 tsp
Peppercorns to taste
Dill to taste
Honey mushrooms 400 g

How to pickle honey mushrooms? Prepare the food. Honey mushrooms are suitable fresh or frozen. If the mushrooms have just been picked, thoroughly clean them of debris and dirt. Rinse them under running water. Cut large mushrooms into several pieces.

If the mushrooms are frozen, then defrost them (I have boiled frozen ones). Boil fresh ones in salted water for 20-25 minutes.

Place the mushrooms in a colander to drain all the water.

Place the honey mushrooms in a saucepan, add a couple of chopped garlic cloves.

Coarsely chop the washed and dried dill.

Add dill to the mushrooms.

Now add peppercorns and salt.

Mix everything well.

Cover the honey mushrooms with a plate of suitable size and press down with pressure — this can be done perfectly by any rolled-up piece or just a jar of water. Leave for 3 hours or overnight.

Taste the mushrooms for salt — if it’s not enough for your taste, add salt; if it’s too salty, rinse.

Place the mushrooms in clean jars and put them in the refrigerator. After a day or two they are quite ready to eat. When serving, you can add chopped onions or green onions and vegetable oil to the mushrooms. Bon appetit!
