Ingredients (6 portions)

Basic:

Garlic 2 clove
Olive oil 2 tbsp
Ground black pepper to taste
Butter 500 g
Bulb onions 1 pc
Chicken liver 500 g
Sea salt to taste
Thyme, thyme 1 tsp
Brandy 1 tbsp

Recipe instructions

Fry chopped onion and garlic in olive oil.

Add chopped liver. Fry. Sprinkle with thyme. Fry until golden brown and pink in the middle. Set the brandy on fire in a separate container to burn off all the alcohol. Add brandy to the liver. Fry for another 1 minute.

Transfer the liver to a blender. Grind.

Melt the butter. Strain the liquid through a sieve. Do not use white precipitate. Add oil, salt and pepper to the liver. Mix. Pass the mixture through a sieve twice.

Place the parfait into portion molds. Place in the refrigerator for an hour.
