How to make beef quenelles? Prepare the necessary ingredients. Beef or veal sirloin is good for minced meat. This dish is perfect for a childrenʼs menu.

Wash the meat. Cut the meat into small pieces. If there are films or tendons, be sure to cut them off so that the minced meat is as uniform as possible.

Minced meat can be made in a blender bowl. Place pieces of meat in a blender and puree until smooth minced meat is obtained. If you use a meat grinder, use a grate with frequent, small holes. Pass the minced meat through a meat grinder at least 2 times to make the minced meat very tender.

Soak the crumb of a loaf or white bread in milk.

Add the soaked loaf to the minced meat and beat again until the minced meat is pureed.

Wash the egg. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. Separate the white from the yolk. Beat the egg whites with a mixer until stiff.

Place the minced meat in a suitable sized bowl, add salt and whipped egg white.

Mix the minced meat well. It should not be thick and dense. Add more milk if necessary.

Since the minced meat is very tender, it may stick a little to your hands. To make it easier to form the quenelles, you can moisten your hands with water. Form the quenelles into small round or oval patties. From the minced meat I received, I got 16 small quenelles.

Place the quenelles in boiling lightly salted water and cook at low simmer for approximately 10-15 minutes. The time will depend on the operating characteristics of your stove. Remove the finished dumplings with a slotted spoon.

The quenelles can be topped with milk or sour cream sauce. Serve beef quenelles with mashed potatoes, baked, stewed or fresh vegetables. Bon appetit!
