How to make dietary fish dumplings? Prepare the necessary ingredients. Any fish will do. I used pollock, having previously cleaned it of skin and bones. Of course, you can take ready-made fish fillets. If the fish is frozen, defrost it in the refrigerator in advance. For tips on how to properly defrost food, see the article at the end of the recipe.

Soak the crumb of a loaf or white bread in cream. If you want a more dietary option, you can replace the cream with milk or water.

I used a blender to prepare the minced meat. You can make minced meat using a meat grinder. Cut the fish fillet into small pieces and place in a blender. Grind until smooth. I divided the fillet into two parts.

To the rest of the fillet, add bread crumbs soaked in cream and an egg. Also beat with a blender until you get a homogeneous minced meat.

Place the minced fish in a bowl, you can add finely chopped herbs. Salt the minced meat, add spices if desired and mix well. The consistency of the minced meat is thin and slightly viscous. It will also depend on the quality of the fish fillet. But the minced meat should not be too liquid. If its humidity is still high, add 1-2 tbsp. l. flour to make the minced meat thicker. My minced meat was of medium consistency; I did not add flour.

It is convenient to form quenelles with a tablespoon. In this case they will be oblong. Scoop the minced meat into a spoon and press it on top with another spoon. You can make the quenelles round.

Bring water to a boil in a saucepan and lightly add salt. Drop the quenelles from the spoon into the pan. You can first put one portion of minced meat into the water for testing. If it falls apart slightly, thicken it with flour as described above.

Cook the quenelles at a very low simmer for about 10 minutes.

Remove the quenelles with a slotted spoon and place on a plate. I got 17 small quenelles.

Serve fish dumplings with fresh or stewed vegetables or with a side dish of cereals, potatoes, or pasta. The dish will be perfectly complemented by béchamel sauce or sour cream and tomato sauce. Bon appetit!
