Stuffed Squid with Shrimp, Cheese, and Rice

Basic:

Squid 4 pc

Filling:

Garlic 2 clove
Salt to taste
Ground black pepper to taste
Lemon juice 1 tbsp
Rice 400 g
Hard cheese 100 g
Parsley 15 g
Vegetable oil 2 tbsp
Shrimps 200 g

Sauce:

Salt to taste
Butter 30 g
Cream 150 ml
Cottage cheese 100 g

How to make squid stuffed with shrimp, cheese and rice? First, prepare the necessary ingredients for the filling. You can use any shrimp: king or Argentine, whichever you like best. The net weight of the shrimp after cleaning the head and shell should be at least 200 g, so take shrimp with a reserve.

First boil the rice in salted water, drain in a colander and cool. The rice should be crumbly and not sticky.

Grate the cheese on a coarse grater. I use regular Russian cheese, but mozzarella for pizza or suluguni would also work well here.

Peel the garlic and chop finely.

Wash the parsley, dry and finely chop.

Heat vegetable oil in a frying pan, add shrimp and garlic, fry, stirring, until golden brown.

Transfer the fried shrimp to a bowl. If there is some vegetable oil left in the pan after frying, try to save it, it will be needed for the sauce later.

In a bowl, combine boiled rice, shrimp, grated cheese, parsley, lemon juice and spices.

Mix everything well.

Clean the squids inside and out. If the squids are frozen, defrost them first, but not completely — frozen squids are easier to clean. I have whole squids, with tails. But you can also buy already prepared, cleaned, frozen tubes without tails. They just need to be defrosted and that’s it.

Stuff the squid carcasses with the prepared rice-shrimp mixture.

Place the stuffed squid in a baking dish.

Now prepare the sauce. Curd cheese needs to be creamy, without additives. Instead of cottage cheese, you can use processed cheese.

In the pan where the shrimp were fried, melt the butter.

Pour in the cream, add curd cheese and salt. Bring to a boil and simmer, stirring for 1-2 minutes over low heat, breaking up any lumps. If your curd cheese is already salty, you don’t have to add additional salt to the sauce.

When the sauce begins to thicken, remove it from the heat. If you still cannot avoid lumps, you can rub the sauce through a sieve.

Pour cream cheese sauce over squid. Place the pan in an oven preheated to 180°C and bake for about 15-20 minutes until golden brown. The exact baking time depends on your oven.
