Lamb Stew with Eggplant, Tomatoes, and Mint

Do you like lamb? Then you will definitely like this recipe! When I discovered the “lamb and eggplant” combination, I simply fell in love! But thatʼs not all — the recipe uses another wonderful combination — lamb and mint. I read somewhere that lamb + mint is a classic, like apples + cinnamon. I really wanted to try it, especially since I had some dried mint left over from the summer! It turned out simply amazingly delicious! This is definitely worth a try, especially since it’s not at all difficult to prepare...

Ingredients (6 portions)

Basic:

Onion 150 g
Garlic 3 clove
Tomatoes 350 g
Salt to taste
Ground black pepper to taste
Vegetable oil 3 tbsp
Mint (dried) to taste
Eggplant 500 g
Basil (dried) to taste
Mutton 500 g

Required ingredients. Vegetables and meat must be washed

I used basil as spices — it goes well with eggplants and mint, which complements lamb

Cut the lamb into arbitrary pieces

Cut the onion into quarter rings

In a frying pan with heated vegetable oil, fry the lamb for 10 minutes over high heat.

Then add the onion and continue to fry for another 10 minutes.

Meanwhile, cut the eggplants as desired — I cut them into cubes. If the eggplants are bitter, they need to be chopped in advance, salted well and left for half an hour to allow all the bitterness to drain away. My eggplants were not bitter

Add the eggplants to the pan with the lamb and onions

Reduce heat and simmer over low heat, covered, for 20 minutes.

You can add some liquid halfway through the process.

In the meantime, cut the tomatoes into cubes

Crush the garlic with the flat side of a knife and chop finely. Letʼs leave it aside for now — weʼll need it at the end of cooking.

Add tomatoes to meat and eggplants

Add spices and salt. Simmer covered for another 20-30 minutes until the meat is cooked. Thatʼs it — active participation is over, enjoy the amazing aroma and wait!
