Roman Beef Saltimbocca Delight

Basic:

Salt to taste
Ground black pepper to taste
Butter 60 g
Beef (roast beef) 600 g
Bacon (raw smoked) 120 g
White wine (dry) 60 ml
Sage (4 sheets, according to the number of chops) 10 g

How to make Roman style saltimbocca from beef? Prepare the necessary ingredients. Veal or beef pulp is perfect for cooking. Use raw smoked bacon or prosciutto (or Parma ham).

Wash the beef in running water and dry.

Cut the roast beef along the wide side into 4-5 equal slices no more than 1 cm thick.

Beat each slice on both sides with a hammer as thin as possible. When beating, you can cover the meat with a bag so that splashes do not fly in different directions.

Lightly salt and pepper each slice of beef.

Place a slice of bacon on each piece of beef.

Pick the 4 largest leaves from the sage. Wash and dry the leaves. Place a sage leaf on each piece of beef.

Use long toothpicks to pierce the pieces so that the meat, bacon and sage are securely attached to each other and do not fall apart when turning.

Fry the beef with bacon and sage on both sides for 2 minutes on each side.

Melt the remaining butter in a frying pan and pour in the wine. Simmer the sauce, stirring, for about 2-3 minutes over medium heat. Return the meat to the pan. Warm in the sauce for 3-4 minutes on each side.
