How to make risotto in creamy sauce with shrimp? Prepare the following ingredients for making risotto. You need special rice for risotto — Arborio or another suitable for this dish, I use medium-grain Arborio. Pre-boiled shrimp. The fish broth is hot; if unavailable, you can replace it with hot water. I took 10% cream. Hard cheese, for example Parmesan.

To prepare risotto, take a deep frying pan or saucepan/saucepan with a thick bottom. Pour olive oil into a frying pan and heat. Peel the onions and chop finely. Fry the chopped onion in oil until translucent. Do not make the fire too strong so that it does not start to burn.

Add the risotto rice to the onion in the pan and fry everything together for about 2 minutes over medium heat, stirring constantly.

Pour dry white wine into the pan with the rice and let the alcohol evaporate, 2-3 minutes.

Next, add a ladle of fish broth to the pan and cook the rice until the liquid has completely evaporated. If the broth is already salty, you do not need to add salt to the rice (to taste), but if the broth is not salty or you are using hot water, you can add salt to the rice. Once the broth has evaporated, add another ladle. And also before evaporation.

When the rice is almost ready — slightly firm on the outside, but not hard, and soft on the inside, add the peeled shrimp (the shrimp have been cleared of the shell, head and tail, and the intestinal veins on the tail have been removed) and continue cooking for about 2 minutes. Donʼt forget to stir the rice.

Pour the cream into the risotto, stir and heat the rice and cream for 1 — 2 minutes. Also at this stage you can add some cheese by grating it on a fine grater. Mix rice with cheese.

Serve the finished risotto immediately after it is prepared. Place rice with shrimp on each plate and sprinkle with grated cheese. This is a separate dish. For Italian risotto, you can offer a glass of dry white wine.
