Baked Meat-Stuffed Zucchini Boats

Juicy and aromatic — original and very tasty! Zucchini stuffed with meat in the oven will perfectly diversify your menu during the vegetable season. What’s unusual is that the filling of the zucchini “boats” is not the usual minced meat, but fried pieces of meat. The resulting zucchini is very tasty, aromatic and filling.

How to make zucchini stuffed with meat in the oven? Prepare your food. Choose young zucchini if possible — they have thinner skin and smaller seeds. But mature zucchini will also work; only the way you cut them will differ. Choose soft meat, preferably pork, chicken or turkey sirloin. The beef runs the risk of remaining tough. Take spices to taste.

Wash the meat and dry it well, as excess moisture will interfere with frying. Cut the flesh (I used pork) into small cubes, about 2 by 2 cm. It is better to cut off excess fat.

Peel the onion and cut into thin half rings.

Heat a frying pan over high heat, pour in vegetable oil for frying. Place the meat. Fry it on all sides until the color changes from pink to gray — this way you will seal the juices inside and the meat will remain soft. Add onion to the meat.

Salt and season the meat with spices. I have a mixture “for meat”. Fry the meat and onions over medium heat for 15-20 minutes. The exact time will depend on the type of meat you use. Then turn off the heat and cool the meat slightly. Turn on the oven to 200 degrees. Cut the zucchini in half lengthwise. Using a teaspoon, carefully scrape out the center with the seeds, forming a “boat”. Be careful not to press the squash pulp. Salt the resulting preparations. If you have a mature zucchini, then cut off the peel from it, cut into circles 2 cm thick, and cut out the middle.

Grate the cheese on a coarse grater.

Fill the resulting boats with fried meat.

Sprinkle grated cheese on top of the meat, then brush with mayonnaise.

Bake zucchini stuffed with meat in the oven at 200°C for 30-40 minutes. The exact time will depend on your oven and the size of the zucchini.
