Oven-Baked Vegetable and Meat Stew

Everyone will love this delicious vegetable stew with minced meat. Vegetable stew with minced meat in the oven is an interesting and tasty dish. It can be prepared for lunch or dinner, and you can additionally serve boiled potatoes — they are quite appropriate in this case. The consistency of the dish is such that it can be considered a thick meat sauce with vegetables. When serving, garnish the stew with finely chopped fresh dill, parsley, and green onions.

Basic:

Tomatoes 80 g
Salt to taste
Bulb onions 50 g
Minced meat 200 g
Paprika 0.5 tsp
bell pepper 50 g
Sunflower oil 40 g
Canned beans 300 g

How to make vegetable stew with minced meat in the oven? Prepare the necessary ingredients: minced meat (my homemade one is made from pork and beef), onions, garlic, red bell pepper (or any kind), fresh tomato, red beans in tomato sauce, salt, ground paprika, cumin seeds. To complete the dish, you can optionally use hard cheese (I used Swiss cheese).

Fry medium diced onion in sunflower oil until translucent.

Add minced meat to the onions. When frying, break it up with a wooden spatula and fry quickly on all sides for 3 minutes. This is quite enough.

Dice the sweet pepper.

Cut the tomato into similar small cubes.

Add a spoonful of tomato sauce from a can of beans to the minced meat fried with onions, stir. This is just for greater elasticity, not necessary. Add ground paprika, cumin seeds or any other spice to your taste, and salt.

In a ceramic or any other baking dish, place the first layer of minced meat fried with onions.

Place the next layer of chopped pepper and fresh tomato.

Add canned beans (beans can also be any kind, the main thing is that they are already prepared, boiled, i.e.). If you use beans without tomato filling, then additionally take tomato paste, tomato sauce or juice. There shouldnʼt be too much liquid.

Place our bean stew casserole with vegetables and minced meat in an oven preheated to 180 degrees for 40 minutes. Cover the pan with foil first.

After half an hour, open the foil and add finely grated hard cheese to the surface of the vegetable stew with minced meat and beans. Place back in the oven, now turn on the grill or convection.
