Ingredients (8 portions)

Basic:

Garlic 40 g
Salt (without top) 1 tsp
Butter 40 g
Vegetable oil 60 ml
Dry spices 1 tsp
Bacon 200 g
Moose meat 1.2 kg

Rub a thoroughly washed and dried piece of elk meat with salt and spices on all sides. Peel the garlic, cut into slices and stuff into the elk meat, making cuts.

Wrap the elk meat tightly in bacon and tie with string.

Heat vegetable oil in a frying pan, fry the wrapped piece until golden brown on both sides.

Line a baking sheet with foil and grease it with butter. Place the fried piece of elk meat on it and wrap it in foil.

Bake the meat at 80 degrees (it is important that the temperature does not rise above 90 degrees) for 5 hours.
