Pork 1 kg
Hard cheese 100 g
Tomatoes 2 pc

Marinade:

Soy sauce 2 tbsp
Olive oil 2 tbsp
Lemon juice 1 tbsp
Mustard 1 tbsp
Garlic powder 1 tsp
Dry spices 1 tsp
Ground black pepper to taste

How to make an accordion from pork? First, prepare the marinade. You can replace dry garlic with 2 cloves of fresh garlic, passed through a press. In addition to these ingredients, you can add another 1-2 tbsp. l. tomato paste or ketchup.

In a bowl, combine soy sauce, olive oil, lemon juice, dry garlic, mustard and spices. Mix everything until smooth. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain ground pepper, take this into account, otherwise you risk over-peppering the dish. There is no need to add salt either — soy sauce replaces it.

Now prepare the rest of the ingredients. Choose tomatoes that are ripe but strong so that they do not spread when slicing and baking. You can use any cheese you like: it can be ordinary cheese like Russian, or mozzarella for pizza is also suitable.

Wash the piece of pork and dry it with paper towels. If you want fattier and juicier meat, take the neck; if with a moderate amount of fat, carbonate will do.
