Oven-Baked Pork with Pumpkin and Garlic

Baked pork with a side dish of pumpkin — two in one. Every year in the fall I make stuffed pumpkin. Each time with new filling. This year, instead of stuffed pumpkin, I decided to bake everything separately. The result was an interesting, no less juicy and tasty dish.

Ingredients (4 portions)

Basic:

Onion 2 pc
Garlic 3 clove
Pumpkin 400 g
Pork neck 400 g

Marinade:

Olive oil 40 ml
Salt to taste
White wine vinegar 40 ml
Dry spices 1 tsp

Measure out ingredients. Cut the pork into portions 1 cm thick. I had ready-made pork neck cutlets.

Wash the pumpkin and cut into long slices.

Marinade. Mix olive oil, wine vinegar, pork spices and salt.

Pour half of the marinade into the meat, stir and refrigerate for 2-3 hours.

Pour the remaining half of the marinade into the pumpkin, stir and leave at room temperature.

Peel the onion and cut in half.

Crush the garlic with a knife.

Place meat, pumpkin slices, garlic and onion on a baking sheet. Pour in the remaining marinade. Bake the meat and pumpkin for about 45-50 minutes at 180°C.
