Cheesy Oven-Baked Stuffed Zucchini

A quick recipe for a hearty lunch or dinner. You can also use regular zucchini for this recipe. The amount of bacon depends on the length of the zucchini you choose. If the vegetables are not very large, 1-2 slices for each half will be enough.

Ingredients (2 portions)

Basic:

Bacon 50 g
Zucchini 1 pc

Filling:

Garlic 1 clove
Salt to taste
Ground black pepper to taste
Hard cheese 60 g
Parsley to taste
Mascarpone 150 g

Prepare ingredients.

Wash the zucchini, dry it and cut it in half lengthwise. Carefully remove the pulp.

Filling. In a salad bowl, combine zucchini pulp, mascarpone, parsley and garlic. Add salt, pepper and mix.

Grind the zucchini pulp.

Grate the cheese on a coarse grater. Peel the garlic and chop finely.

Wash the parsley and chop finely.

In a salad bowl, combine zucchini pulp, mascarpone, parsley and garlic. Salt and pepper.

Fill the zucchini halves with filling and smooth out.

Sprinkle grated cheese on top.

Wrap each zucchini half in a strip of bacon. Alternatively, you can wrap the zucchini in bacon first and then sprinkle it with cheese.
