Basic:

Garlic (dry) 1 tbsp
Salt to taste
Ground black pepper to taste
Water 60 ml
Tomato paste 120 g
Vegetable oil 1 tbsp
Minced meat 200 g
Eggplant (large) 1 pc
Herbal mixture (Provençal — 1 tbsp. l.) g
Pork tenderloin 250 g

How to make eggplants with meat baked in the oven? Prepare the necessary ingredients. It is advisable to take a larger eggplant. You can use any spices to suit your taste.

Wash the pork tenderloin in running water and dry with a paper towel. Cut into not very thick slices.

Wash the eggplant, cut off the tail, dry it and cut into not very thin semicircles.

Place them in a bowl, lightly salt them, stir and leave for 5 minutes so that the salt draws out all the bitterness.

Dilute tomato paste with water, add dry garlic and Provençal herbs.

Place half of the eggplant slices on the bottom of a greased baking dish.

Lay out all the minced meat. You can use any minced meat, I used pork and beef.

Next, lay out the remaining eggplants and pour the remaining tomato sauce over them.
