Oven-Baked Goose with Apple and Cherry Plum Stuffing

Fragrant goose with apples for the festive table! When I was buying apples for stuffing, at the market they advised me to also take green cherry plum. It is optional, but with cherry plum it turns out tastier and more aromatic. The taste of the filling changes immediately. Therefore, if it is possible to use cherry plum — green or ripe — in the filling, be sure to add it.

Basic:

Goose 1 pc

Marinade:

Lemon juice 50 ml
Ground black pepper to taste
Salt to taste

Filling:

Apples 6 pc
Cherry plum 150 g

Wash the goose, remove excess fat and sebaceous glands. Pour boiling water over the carcass on all sides. Marinade. Mix lemon juice, salt and pepper. Coat the goose with marinade inside and out.

Make shallow cuts in the skin of the breast, being careful not to touch the meat, and place the goose in the refrigerator overnight.

Filling. Wash and dry the apples and cherry plums. Cut apples in half or quarters.

Stuff the goose tightly with apples and cherry plums. The abdomen can be stitched up.

In an oven preheated to 200°C, place a deep baking sheet with water on the lower level, place the goose on the wire rack above the baking sheet. Cover the bird with foil and bake for about 15 minutes. Remove the foil, reduce the temperature to 180°C and bake the goose for another 50-60 minutes, pouring fat from the bottom baking sheet. Then reduce the temperature to 170°C and bake for another 50 minutes. When the wings are browned, you need to wrap them in foil to prevent them from burning.

Instead of fat from the bottom baking sheet, you can baste the goose with a mixture of soy sauce and honey (1 tbsp honey per 3 tbsp soy sauce). This way the bird will acquire new taste qualities and a beautiful golden crust.
