Letʼs prepare the ingredients according to the list. We cut off the crusts from the pieces of bread, freeze them in the freezer, we will need them for breading. A piece of butter also needs to be frozen in the freezer. Cut the bread crumb into pieces and pour milk or cream, let them soak.

Wash the chicken fillet, dry it and cut it into cubes. If you don’t have a blender, you can grind the meat in a meat grinder or finely chop it with a knife. If you don’t have time, you can use ready-made minced chicken.

Grind the meat using a blender until it becomes mince.

Peel the onions and finely chop them with a knife. Sauté the onions in melted butter in a frying pan; there is no need to fry the onions for a long time, they should become soft and transparent, but not browned.

Grate the frozen butter. Add the prepared ingredients to the minced chicken in a blender bowl.

Transfer the minced meat into a bowl with bread. Add salt and ground black pepper to taste. Mix. To make the minced meat of the desired consistency, it is better to knead it like dough with your hands. Then we collect the minced meat into a lump and hit it on the work surface several times; the minced meat needs to be beaten so that the cutlets are soft and fluffy.

Grate frozen bread crusts or grind them using a coffee grinder. With hands moistened in cold water, we form small pieces of minced meat and roll them on all sides in breading.

Melt a piece of butter in a frying pan and fry the cutlets on both sides until golden brown.

Then we transfer the cutlets into a baking dish (I have a universal frying pan with a removable handle, in which you can not only fry, but also bake in the oven) and send it to preheated to 180 degrees for 10 minutes.
