I will cook with boiled forest mushrooms. But you can replace them with champignons. There is no need to cook the champignons. Just chop and cook. Peel the onion, rinse and finely chop. To fry mushrooms, heat a frying pan until hot, pour in a little vegetable oil and fry finely chopped onion for a minute, then add finely chopped mushrooms to it and fry everything together for a few minutes until the liquid from the mushrooms evaporates.

Add salt and spices to the minced meat to taste. Stir. Beat the minced meat against the bottom of the bowl several times to make it firmer. Thanks to this, the nests will not fall apart during baking.

For baking, you can take any heat-resistant form. I have a ceramic one. Form small balls from the minced meat and place them in a greased pan. Make a small indentation in the center of each ball and brush with mayonnaise.
