Stuffed Pork Cutlets with Chopped Egg Filling

Deep-fried cutlets with eggs — a dish for a holiday. Minced pork cutlets with chopped eggs inside are good served with mashed potatoes, pasta, buckwheat, pearl barley and any other cereals. Ingredients (5 portions)

Basic:

Salt to taste
Wheat flour 100 g
Milk 100 ml
Breadcrumbs 200 g
Bulb onions 2 pc
Vegetable oil 0.5 l
Pork 500 g
Paprika 3 tbsp
Chicken eggs (three for the filling, two for the batter, one for the minced meat) 6 pc
Bread 30 g
Ground pepper mixture to taste
Italian herbs 2 tbsp

Cut the pork tenderloin into medium pieces and grind in a meat grinder along with the onion. You can also use a blender to prepare minced meat. Add one egg, salt and a mixture of peppers to the minced meat to taste. Soak the bread crumb (literally a couple of pieces) in milk for a couple of minutes and also add to the minced meat. Mix the contents well with your hands until smooth.

Boil hard-boiled eggs in salted water for ten minutes. Transfer them to cold water to cool. After this, we peel them, cut them into cubes and add a little salt so that the filling is not bland.

Pour breadcrumbs into a flat dish, mix them with paprika and Italian herbs. In another plate, in which it will be convenient to dip the cutlets, beat 2-3 eggs, add salt and beat them. Pour flour into a third flat plate.

We take a piece of minced meat, form a flat cake, put a small amount of filling in the middle and pinch the edges tightly. After this, you can roll the cutlet a little in your hands, giving it an oblong shape. We do this with all the minced meat.

Take the cutlet and dip it first in flour, then in the egg and finally in breadcrumbs. We do this with all cutlets.

Pour vegetable oil into the frying pan and heat it well over high heat, then reduce the heat. Place the cutlets and fry on each side for 7-10 minutes. Regulate the heat so that the cutlets are not burnt on the outside and raw on the inside.

Place the fried cutlets on a paper towel to absorb any remaining fat. Serve cutlets with any side dish and fresh vegetables.
