How to make pork neck in a frying pan? Very simple and fast. To begin, prepare the necessary ingredients according to the list. Vegetable oil can be olive or sunflower depending on preference. With sunflower, the taste of the top crust on the meat will be more tender, with olive — with a slight characteristic bitterness. In addition to these spices, you can use your own to taste.

The pork neck must be taken out of the refrigerator in advance and allowed to lie in the room for at least 1 hour so that the meat inside is at the same temperature. Then wash the pork and dry it with paper towels. Cut the piece across the grain into slices approximately 1-1.5 cm thick each. I got 2 slices.

Pour lemon juice over the resulting pieces of pork, sprinkle with pork spices, salt and pepper. Leave to marinate for 20 minutes at room temperature. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt and pepper. Take this into account, otherwise you risk over-salting and peppering the dish. Pat the pork dry with paper towels before frying.

Heat vegetable oil in a heavy-bottomed frying pan over medium heat. Add the pork neck and fry for about 5 minutes on each side. The exact time depends on the desired degree of doneness and the thickness of the meat slices. If you have a grill pan, it is better to cook on it — you will also get a beautiful pattern on the meat.

At the end of frying, remove the pan from the heat. Cover with a lid and let the pork stand for 10 minutes so that the meat juices are evenly distributed inside.
